Cherry Berries on a Cloud


Back in Arkansas we had this wonderful place to eat called the Country Village.  They had a steakhouse, BBQ place, furniture store, jewelry store, taxidermy, catfish restaurant, and my favorite....a bakery!  They made the best chocolate donuts and chocolate chip cookies I've ever put in my mouth.  They also made LOTS of desserts.  Our family favorite was called Cherry Berries on a Cloud.  And let me tell you...it's like being on Cloud 9 when you eat this dessert!

I must warn you.  If you want to make this dessert you must prepare one day ahead.

So, let's get started.


The night before you need: 6 egg whites, 1/2 tsp of cream of tartar, 1/4 teaspoon of salt,
 1 1/2 cups of sugar.  

These four ingredients will be used to make the bottom layer: the meringue!  


Put the egg whites in a mixing bowl and discard the egg yolks.  


Now, start mixing!  As you are mixing, add about a tablespoon of sugar until all the sugar is used.  


Isn't it beautiful.  You want the meringue to create stiff peaks.  This isn't ready quite yet.  
Keep on mixing! 



Getting stiff....but not stiff enough!  Keep mixing! 


Taadah!!!!!!!!!!  The meringue is perfect!  It looks like perfectly, white mountains!  :)

By the way, if you do not have a KitchenAid mixer I highly suggest purchasing one for yourself or someone you love.  It is my FAVORITE appliance in my ENTIRE kitchen.  It makes the best meringue, EVER! 

Plus, they come in really awesome colors!  Check them out online.  


You're going to be using a 9x13 baking dish.  Make sure it is greased well before adding the meringue. 



Spread the meringue into the dish and bake in preheated 275 degree oven for one hour.   After it has cooked for one hour turn the oven off and leave it in there overnight or for 12 hours.  


DO NOT OPEN THE OVER DOOR! 
While waiting you can:
Go to sleep
Wash clothes
Go to work
or anything else that's calling your name.  




The second layer is cream cheese, 2 cups miniature marshmallows, 2 cups of whipping cream (whipped), 1 teaspoon vanilla, and 1 cup sugar


Whip the whipping cream until fluffy.  Again, if you don't have a KitchenAid Mixer, you MUST get one!  


Next, mix together the softened cream cheese, 



Then, add 1 cup of sugar and vanilla.  


Mix together until smooth.  


Add 2 cups of miniature marshmallows 


 Add whipped cream to mixture and stir together until blended.  


Carefully, spread the mixture on top of the beautiful meringue that was made 12 hours before.  



Next, you're gonna add the berries to the cloud (aka cream cheese mixture).  



Mmmmmmm, doesn't it look good!  



Cut a piece (or two) for yourself and savor the flavors.  It will become a family favorite!
